Tasty Goodness

Two of the main foods of my gallbladder diet are cucumbers and avocado. I have always been a fan of cucumbers, and have become a huge lover of avocados the last five or so years (once I tried homemade, fresh guacamole and discovered how friggin' amazing it is). For lunch today I had both, in some pretty tasty concoctions that I wanted to share with you real quick.

This first one is a really good Asian cucumber salad recipe that I got from Rachael Ray's 30 Minute Meals. Now, those of you who know me well know that I don't always care for her food, but this was definitely one of her home runs. Sweet and vinegary, the cucumbers taste amazing. You will see the onions on the plate on the side, and that's because-- as discussed yesterday-- I don't actually eat the onions if I can avoid them. So good though.




Then there is the simple avocado recipe I got from the Haas Avocado people's website. Super simple. It's just sliced avocado, salt & pepper, a little bit of extra virgin olive oil, and either half a lemon or lime juiced. My mouth is watering just talking about it again. There is no better way to enjoy avocado outside of guacamole if you ask me.
That's the food porn I have for today, folks. Looks good, doesn't it?
On a side note, I did buy new pants today, and, yes, I am officially back down to my "small" size! Woohoo! I wasn't expecting to have lost weight, and definitely not this fast, but isn't it amazing how fixing my digestion through detox, supplements, and acupuncture had such a dramatic effect on my body? And conversely, isn't it mind boggling how having such poor digestion (and a not quite as stellar diet that did feature fruits and veggies, but had quite a bit of not as good things included) had caused my body to react-- or revolt-- for that matter? I can't ask that question enough.
